The French chef talks to The Wall Street Journal Europe about how he starts his weekend.
Christian Constant is a powerhouse on the Parisian culinary scene. More than a decade ago, he gave up his two Michelin stars at the Hôtel de Crillon's Les Ambassadeurs and moved to rue Saint-Dominique on the Left Bank.

"If we are in Paris, I prefer bistro cooking rather than haute cuisine. I spent years and years making that sort of food and nowadays, I don't want to eat it anymore. Now I spend my entire time looking for ways to make cooking simpler."
